15-minute lunch/dinner

 

We all live in a hurry, admit it. Having time to cook meals is becoming more and more luxurious. This recipe can help anybody with a shortage of time and a lot of desire to make healthy dishes. Everything happens for 15 minutes. It’s nice a quick lunch / dinner and can easily be taken away at the office or eaten while running errands. Not to mention it’s really low-calories and suitable for fitness enthusiasts who want to eat as clean as possible. Let’s get to it.

INGREDIENTS:

  • 2 cups spinach/nettle or mix of both
  • 2 large eggs
  • 1 cup grated cheese of choice
  • a handful of frozen broccoli or other vegetable you like
  • grated parmesan
  • salt, black pepper

PREPARATION:

Preheat the oven on 200 C /400 F. Wash the spinach and steam it for couple of minutes together with the broccoli until they soften. Remove the surplus water. Mix the vegetables with the cheese and add your favorite seasonings. Divide the mixture equally in two fireproof cups or small bowls and make a little hole in the middle. Crack the egg in and bake for 7-8 minutes in the higher part of oven until you like your egg. Sprinkle some grated parmesan on top and put them back in until it melts.

Enjoy warm or cold with a piece of whole-grain bread and a lovely drink. Bon apetit!
