Exotic salad

I have a thing about strange food combinations, especially mixing sweet and salty together. This recipe proves it and although the ingredients may seem strange at first sight, the final product is really fresh and delicious. It is a spring/summer type of salad and goes very well with chilled white wine. Here’s what you need:

INGREDIENTS:

Serves one big bowl

  • 1 tomato
  • 1 big lettuce
  • a handful of baby spinach (optional)
  • 1 cup feta cheese
  • half a cup strawberries
  • sesame seeds
  • chives
  • olive oil
  • lemon juice
  • salt, pepper

PREPARATION:

Wash you greens and chop them finely. Put the in a large bowl and add the cut in squares cheese. Cut the tomatoes and the strawberries. Chop the chives and use its flowers, too. Combine everything in the bowl, season with salt, pepper, olive oil and lemon juice and mix very well. Before serving, sprinkle with some sesame seeds. Serve right away with chilled white wine. Hello! I’m here with a new delish recipe for all of you, who are counting their calories in order to lose some weight before summertime. This one is super healthy, low calorie and rich in nutrition. And let’s not forget – super easy to make, as all my recipes.

INGREDIENTS:

Serves 3

  • 6 big cod fish fillets – fresh or frozen
  • 2 big potatoes
  • 2 carrots
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tbsp mustard
  • 6 garlic cloves
  • salt, black pepper
  • 4 tbsp olive oil

PREPARATION:

Wash the fish, peel the potatoes and carrots. Cut the vegetables in big pieces. Put 2 tbsp of olive oil in the baking tray you’re going to cook the dish. Put the potatoes, carrots, broccoli, cauliflower and garlic in. Season the with salt and mix with your hands. Arrange the fish fillets over the vegetables and sprinkle them with salt and pepper from both sides. Mix the mustard with 3 tbsp of hot water in cup and gently pour it over the fish. Add the remaining oil, then add half a cup of water in the tray and cover with aluminum foil. Bake for 45 minutes on 200 C/400 F, then remove the foil and let it bake for another 10-15 minutes in order to get the slightly crispy and golden look. Enjoy with slices of lemon and white wine.
