Pumpkin soup


Well, here it is another pumpkin recipe on the internet. There’s nothing surprising about it, but hey-who said boring is not good? This soup is creamy, hot and incredibly delish. Here’s how to do it:


half a pumpkin, cut into pieces

2 carrots

2 small onions /1 big

1 small sweet apple

2 cups vegetable broth

1 tbsp unsalted butter

salt, pepper, other seasonings

raw pumpkin seeds


Peel and cut your pumpkin, onion, carrots and apple. Soute the onion and carrots in the melted butter, until the onion caramelizes. Pour the vegetable broth and bring to boil. Add the pumpkin pieces and the apples. Add salt and any seasoning you like. Cook for 15 minutes or until the pumpkin is soft. Use a mixing stick or transfer it to a blender. Blend until smooth and creamy. When serving, sprinkle some raw pumpkin seed on top along with little black pepper. Enjoy warm.
