Sour cherry sweetness

Hello, guys! Think it’s time to diversify the salty recipes, which I’m giving you lately. Here, that the main character today. Sour cherries used to spice up a plain type os dessert. The final product is perfect for your afternoon pick-me-up coffee or to serve to an unexpected guest while chatting. It can be made with fresh or preserved fruits, so no season trends on this one. Let’s get started!


3 eggs

200 gr. / 1 teacup sugar

250 gr. / 1 and a half cup all purpose flour

2 tsp baking powder

200 gr. / 1 cup sour cherries (preserved or fresh)

vanilla extract

lemon extract

10 gr. white rum

sugar powder for decoration


Crack the eggs in a large mixing bowl. Add the sugar and use a stick mixer until the sugar is almost dissolved. Add the vanilla and lemon extracts and the rum. Stir while gradually adding the flour and the baking powder. Use the mixer to combine them very well. Set aside.

Wash your sour cherries and remove the pits, if using fresh fruit. drain if you’re using preserved ones. Line a cake form with baking paper and arrange your sour cherries on it. Cover them with the eggs mixture and bake in a preheated on 180 C / 350 F over for 40 minutes. Let it cool and sprinkle it with sugar powder.

Serves very well with coffee and ice-cream on the side. Bon appetit!
