Spinach & potato balls

Taking your daily dose of greens is actually very easy, just use your imagination. These spinach balls are super easy and very delicious. You can use another greenie, if you like, or more than one. Basically, you need hard boiled potatoes, greens, some flour, baking powder and seasonings. You make the balls with wet hands and bake. Here is the exact ingredients I used for the balls pictured in this post:

INGREDIENTS:

(for approx. 18 balls)

3 big potatoes, hard boiled

500 gr. / 18 oz fresh spinach or other greens

4 tbsp. grated yellow cheese

1 large egg

2 tbsp flour (optional)

half a teaspoon baking powder (optional)

salt, black pepper, garlic powder

PREPARATION:

Mash the potatoes in a mixing bowl, add the cheese, the egg and all the seasonings, mix very well. Heat a small pot and add the washed spinach in. Steam for about 2-3 minutes until soft, but still bright green. Cool with water and squeeze out the excess water (very important otherwise the balls will be watery). Chop finely and add it to the mixing bowl. Now is the time to see if the mixture is too soft and creamy to form a hard ball – if so, add the flour and the baking powder. You need the mixture to be pretty hard.

Use your hands to form equally sized balls. If the “dough” is too sticky, water your hands before making each and every ball. Put on a tray lined with parchment paper. Bake in a preheated on 180 C / 360 F oven until golden brown on top – should take about 40 minutes, depending on your oven. Note: You can fry the balls, but they are healthier when baked.

Serve with yogurt sauce. Just mix one cup yogurt with some garlic powder and add finely chopped dill in.
