Fish fillets with vegetables

Hello! I’m here with a new delish recipe for all of you, who are counting their calories in order to lose some weight before summertime. This one is super healthy, low calorie and rich in nutrition. And let’s not forget – super easy to make, as all my recipes.

INGREDIENTS:

Serves 3

  • 6 big cod fish fillets – fresh or frozen
  • 2 big potatoes
  • 2 carrots
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tbsp mustard
  • 6 garlic cloves
  • salt, black pepper
  • 4 tbsp olive oil

PREPARATION:

Wash the fish, peel the potatoes and carrots. Cut the vegetables in big pieces. Put 2 tbsp of olive oil in the baking tray you’re going to cook the dish. Put the potatoes, carrots, broccoli, cauliflower and garlic in. Season the with salt and mix with your hands. Arrange the fish fillets over the vegetables and sprinkle them with salt and pepper from both sides. Mix the mustard with 3 tbsp of hot water in cup and gently pour it over the fish. Add the remaining oil, then add half a cup of water in the tray and cover with aluminum foil. Bake for 45 minutes on 200 C/400 F, then remove the foil and let it bake for another 10-15 minutes in order to get the slightly crispy and golden look. Enjoy with slices of lemon and white wine.
